Cake Mix Cookies

I finally made those cookies I've been dreaming of, dark chocolate Cake Mix Cookies. (And this after banana nut muffins this morning...) Several years back my blog friend Judi posted the recipe. Cake mixes were on sale last week and I picked up a dark chocolate one for just this occasion. Add two eggs and a half a cup of oil to one cake mix, roll in balls and bake at 350ยบ for about 10 minutes. Instant cookies! And in any flavor you choose.

I don't typically bake because it's so hard not to indulge. Just to prove it I cheated and ate a few. They were yummy.

Boston Brown Bread

Both Rachel and I mentioned baking Boston Brown bread for Thanksgiving dinner this year. I looked it up online and found most of the recipes out there to be quite different from the one Mom always made when we were little girls. Mom's recipe is so much easier, requires fewer ingredients and is so yummy that I thought I'd share it with all of you. Use medium sized cans and don't overfill them. My bread always runs over. Not only is it messy, but it spoils the nice crunchy tops that we always fought over as kids. Maybe I should use seven cans instead of six.

BOSTON BROWN BREAD

1 c. raisins
3 c. water
2 c. sugar
4 T. shortening
5 c. flour
4 t. baking soda
1 t. salt

Bring water and raisins to a boil in large saucepan. Turn off heat. Add sugar and shortening. Sift together dry ingredients. Add to raisin mixture. Beat well making sure no large lumps remain. Bake in 6 greased cans at 350° for 1 hour.

Cookies in a Flash!

This morning I went on a search for that very easy "cake mix" cookie recipe and found it hidden away in the archives of gmj's (Judi) blog. I think its worth repeating, just in case any of you missed it the first time around. Takes the hassle right out of baking! And they come in assorted flavors too. Last year we tried cinnamon swirl and they were yummy.

"Cake mix + 2 eggs + 1/2 cup of oil = Cookies!!
Mix, bake at 350 degrees .
Any cake mix. Add nuts, chocolate chips, or what ever and ta-da!!"


Today I used a German chocolate cake mix and some leftover almond slices. They're baking as we speak. Mmmmmm! I'll let you know if they were a success.
