Here they are, Erin...
Molasses Cookies (my favorite)
3/4 c shortening (I used part butter)
1/4 c molasses
1 egg
1 c sugar
2 t baking soda
2 c flour
1/2 t gr. ginger
1/2 t gr cloves
1 t cinnamon
1/2 t salt
Melt shortening in 3-4 qt saucepan over low heat. Remove from heat and cool. Add sugar, molasses, and egg. Beat well. Sift together dry ingredients. Add to first mixture. Mix well. Chill. Form into ball and roll in granulated sugar. Place on greased cookie sheet (or parchment paper) 2" apart. Bake at 375 degrees F for 8-10 minutes.
Note: I add another 1/2 c flour to my dough because, unlike my mother's perfect, thick and chewy molasses cookies, mine typically want to spread out and be flat little pancakes.

Yay - I'm going to try and hunt down molasses today. I really want to make these - they look so yummy.
ReplyDeleteThey are way, way too yummy.

Yum. This is one of our favorites, too! (and I always add more flour so they won't be crepes. ha.)
ReplyDeleteI just referred to my chocolate chip cookies as crepes yesterday! I have to add more flour to them too.

Hi Martha... They look so good. While you were making them....I was in the kitchen making peanut butter cookies.
ReplyDeleteIt's cookie baking time, especially when folks will be by to help me eat them.

I love your photos Martha. Where I live, a couple of years ago it was the coldest place on earth for that one day. Colder than Siberia!!!!!! It was about - 58celcius. I took a photo and it looked sooo eerie :-( Had a green tinge.....Those cookies look so good. I think I am going to get some molasses today :-) I'm in Arizona for 3 months, but home made cookies are always so good.

"Slower than molasses in January." That's what Mom used to say.
DeleteIf you're near Scottsdale, I hear there's a great wood fired pizza place called LAMP Pizzaria. The owner grew up in Fort Erie, Ontario and is the cousin of some very good friends.
Hope you find some molasses and make a batch of yummy cookies.

Martha, take that picture down! Those look ridiculously wonderful! I LOVE molasses cookies. My m.i.l. gave me her mama's recipe a while back, and oh dear, they are too yummy for me to make.....this cold weather is making me bake too...and my resistance to such things is running low lately...
ReplyDeleteDella, they are my biggest weakness! I can't remember a day when Mom's molasses cookies weren't my favorite. The good thing for you is that there are plenty of other people to help you eat them up.

Hi Martha, your recipe is exactly 1/2 of my favorite gingersnap recipe. Baked some up yesterday, but used vegetable shortening for that crunch. Thanks! Stay warm.
ReplyDeleteYou're welcome! My biggest problem with these cookies is that I love them so much! You stay warm too.

Mine never turn out as good as yours.
ReplyDeleteI needed to add more flour than the original recipe. Mom made them best.
